White Jesi Cauliflower, also known as "early Jesi cauliflower", is a traditional Italian variety grown since the late 19th century in the Marche region between Jesi and San Benedetto del Tronto. It stands out for its globe-shaped inflorescence, made up of white curds, enclosed by broad ash-grey leaves.

The White Jesi Cauliflower Plant

Its botanical name is Brassica oleracea var. botrytis, belonging to the Cruciferae family (Brassicaceae). Over the years, the variety has undergone repeated selection to improve its commercial traits: originally the head was yellowish with spiral, cone-shaped bumps, while today it is more regular and white in colour, while retaining the earliness and hardiness typical of this historic variety.

How to Sow White Jesi Cauliflower

Being an early variety, transplanting is generally done in spring-summer, for a harvest that can begin as early as autumn. The growing cycle is shorter than that of late varieties, in line with the tradition of fast cultivation that characterises this cauliflower.

How to Grow White Jesi Cauliflower

White Jesi cauliflower prefers medium-textured, cool, well-drained soils with a pH between 6.5 and 7.5. It is a hardy variety, able to tolerate less fertile soils compared to more demanding cultivars, which makes it well suited to traditional, family-scale growing.

Harvest when the florets of the head are still tightly closed and compact, cutting plants at the collar and leaving a few protective leaves for handling.
