Pink Parmac cauliflower is a colourful variety with a pink-violet curd, rich in anthocyanins, standing out for its decorative appearance and slightly sweeter flavour than white varieties.
Its botanical name is Brassica oleracea var. botrytis, belonging to the Cruciferae family (Brassicaceae). The compact curd takes on a pink-violet colour thanks to anthocyanins, natural pigments also found in blueberries and red grapes.
The growing cycle is around 90-100 days from transplanting, with staggered sowing between spring and summer for autumn and winter harvests.
It prefers cool, organic-rich, well-drained soils, with sunny exposure and steady watering during curd formation.
Avoid water stress and temperature swings that could affect the curd's colour and compactness. Respect transplanting distances for good airflow.
Like other Brassicaceae, it can be affected by cabbage white caterpillars, aphids and flea beetles; watch out for waterlogging, which favours root rot.
Pink cauliflower is rich in anthocyanins, minerals, fibre and vitamins A, C and B-group. It has particularly high antioxidant properties thanks to the pigments that give it its colour.
