A traditional garden onion widespread across Northern Italy, the yellow flat onion is famous for its excellent kitchen yield and long winter storage life.
Allium cepa yellow belongs to the Amaryllidaceae family. The vertically compressed bulb develops tough amber skins, which act as natural protection against drying out during storage.
It is sown in late summer, between August and September, for overwintering seedlings, or in early spring for direct field sowing in colder areas.
A sturdy, adaptable plant, it tolerates both clay and sandier soils well, provided they are drained; light mulching helps control weeds without stressing the roots.
The ideal harvest time is when about 50% of the foliage has naturally bent over; early harvesting would compromise the bulb's storage capacity.
It can be subject to downy mildew and neck rot in conditions of excessive soil moisture; common pests include onion fly and thrips.
It is the everyday kitchen onion par excellence: perfect as a base for sautéing, risottos, sauces and winter preserves thanks to its strong flavour that mellows with cooking.
Yellow onions are rich in quercetin, an antioxidant flavonoid, and also have diuretic properties, plus a good vitamin C content.
Per 100 grams, yellow flat onion provides about 31 kcal, 1.1 g protein, 7.1 g carbohydrates (of which sugars about 4.3 g), 0.1 g fat and 1.4 g fibre. It has a good vitamin C content (about 6 mg) and potassium (about 139 mg).
