The Capperino Stuffing Pepper is a small, round-fruited variety with thin, compact flesh particularly suited to preserving: in oil, in vinegar, or stuffed as small bite-sized parcels. Its compact shape makes it easy to hollow out and fill, hence the name reflecting its traditional small-format stuffing use.

The Capperino Stuffing Pepper Plant

Its botanical name is Capsicum annuum, belonging to the Solanaceae family. The plant grows as a compact bush, generally 40-60 cm tall, with light green foliage and the upright habit typical of the species.

The fruits stay small in size, ideal for harvesting in large numbers and processing right after picking for jarred preserves.
