Kalibos cabbage is a local variety originating from Eastern Europe, with a distinctive pointed conical shape and an intense reddish-purple colour, very attractive on the market.
Its botanical name is Brassica oleracea var. capitata f. rubra, belonging to the Cruciferae family (Brassicaceae). The head has a compact, well-formed structure, with an average weight of 1.0-1.3 kg, and large, pointed leaves. The stem can reach up to 20 cm in height.
A late variety, with a growing cycle of around 100-105 days from transplanting. During cultivation it can help to mound soil at the base of the stem for support.
It adapts well to cold and grows successfully even in cool climates. It has fairly high fertiliser needs and prefers good spacing between plants, about 50 cm between rows and 40 cm within the row.
Thanks to excellent post-harvest storage, it keeps its colour and firmness for a long time. A 4-5 year rotation break between crucifer crops on the same plot is recommended.
Like other Brassicaceae, it can be affected by cabbage white caterpillars (Pieris brassicae), whose larvae are easily controlled with Bacillus thuringiensis-based products.
The leaves are tender, with a sweet, delicate taste, less bitter than other red cabbage varieties, excellent eaten raw. Rich in anthocyanins, vitamin C and minerals, it is also prized for lactic fermentation, traditionally eaten as pink sauerkraut.
