Emerald Savoy cabbage is an early variety producing large, compact, dark green heads with a globe shape and slightly blistered leaves.
Its botanical name is Brassica oleracea var. sabauda, belonging to the Cruciferae family (Brassicaceae). Heads are large and compact, with the typical slightly crinkled leaf surface of savoy cabbages.
Being an early variety, it matures in around 55 days from transplanting in spring sowings and around 65 days in summer sowings.
This vegetable resists splitting well and also tolerates overripening, making it suitable for slightly delayed harvests without loss of quality.
Ensure consistent irrigation, preferably drip, to avoid water stress that could reduce head size. Carry out 2-3 irrigation passes right after transplanting to aid establishment.
Like other Brassicaceae, it can be affected by cabbage white caterpillars and aphids. Its good tolerance to overripening also reduces the risk of post-harvest rot.
Savoy cabbage is known for its therapeutic properties and can also be eaten raw; in the kitchen it is mostly used to prepare soups, stews, or to wrap other dishes in its leaves.
